10 cocktail bars in portland to try this summer

caffeine, chianti & cocktails☕🍷🍸

Since moving to Portland in the fall, I’ve been making my way through the city’s bar scene, and it does not disappoint. There are so many incredible cocktail bars here, each with its own distinct vibe. One of my favorite things about cocktail bars is that it’s never just about the drink—it’s about the full experience. The design, the music, the creativity behind the menu. And Portland really excels at that.

I’m so excited to share this post, highlighting 10 cocktail bars I’ve tried that are absolutely worth checking out this summer (or honestly, any time of year). Let’s get into it!

box social

First up is The Box Social, a romantic, slightly ethereal spot in the Mississippi District. The space is open, airy, and beautifully designed, with floor-to-ceiling windows that let in tons of natural light. There’s a stunning mural on the back wall, and the overall atmosphere feels calm, soft, and a little whimsical. I ordered an espresso martini to kick off my night (pre-concert energy), and it was exactly what I wanted and the perfect start to the evening.

too soon

Too Soon was easily one of the most memorable cocktail experiences I’ve had in Portland so far. Located in Kerns and recognized as one of the top cocktail bars in the country, the space is dark, moody, and colorful, with a high-energy vibe from the moment you walk in. Instead of a traditional menu, you can choose a flavor profile (something like “citrus & refreshing”), and the bartender creates a custom cocktail based on your preferences. My friend and I picked the same category and ended up with completely different drinks, which was such a cool experience. Mine leaned fruity and slightly tropical (guava vibes), while hers had a ginger candy profile. Our bartender, Connor, made the whole experience so fun. He brought us espresso jello shots topped with salted caramel whipped cream, which were unreal. We definitely left in very good spirits.

tropicale

If you love tropical drinks, Tropicale is a must. They’re known as the “piña colada king” of Portland, and honestly, that checks out. The drinks are dangerously good and often served in a pineapple, which somehow makes it 10x better. The food also deserves a shoutout. I ordered chips with salsa and guac, plus a carnitas taco, and I’m still thinking about those chips weeks later. They also have a spacious outdoor patio, which makes this an ideal summer spot, or a place to pretend it’s summer when it’s not.

hale pele

Staying in the tropical lane, Hale Pele is a full-on indoor tiki experience. The space is dark and immersive, with detailed decor that fully commits to the theme. They serve classic tropical cocktails like mai tais, hurricanes, and piña coladas, along with drinks that are literally lit on fire before they hit your table. It’s fun, over-the-top, and perfect when you want a full escape!

rum club

Rum Club was actually the first cocktail bar I went to after moving here, and it’s still one of my favorites. At this point, I’ve entered my rum era, and this place delivers every time. The space is cozy, colorful, and always lively, with a small outdoor patio as well. The drinks are strong (fair warning), but incredibly well-made. I’ve loved everything I’ve tried, from their classic daiquiri to a perfect mojito. During my last visit, I tried the classic rum flight and paired it with their rum spice cake topped with orange blossom syrup and ice cream…a very nutritious dinner, I know. I always leave this place on a high note and cannot recommend it enough!

secret grove

Located in the Pearl District, Secret Grove is a cocktail bar that easily turns into a night out. They also have live music and DJs on weekends, which makes it the perfect place to party! My friend and I stopped in earlier to start the evening off with espresso martinis (they have a full list of coffee cocktails), and it was incredible. The interior is beautifully designed, open and trendy with lots of live plants and bamboo details. It’s the perfect place to start the evening for a night out, and I can’t wait to go back when it’s busier and the DJs are playing!

pink rabbit

Also in the Pearl, Pink Rabbit is one of the most fun, high-energy spots on this list. It’s incredibly colorful and playful with bold decor and a projector behind the bar. It’s definitely has major “going out” energy and is the perfect place to start the evening! They serve Asian-inspired bar snacks such as fried chicken…which is amazing. The cocktails lean fruit-forward and slightly sweeter, and they are absolutely gorgeous in presentation. I ordered the “Sneaky Tiki,” a rum-based drink having “big mai tai energy,” and it was exactly my kind of cocktail. They also have a bit of outdoor seating out front which is so fun for the warmer weather right now.

fools & horses

Right next door to Pink Rabbit, Fools & Horses offers a completely different mood. It’s polished, dimly lit, and classic, with an absolutely striking bar. They have a small stage where they occasionally host jazz and live music, which adds to the atmosphere. I tried their Golden Hour cocktail, which was described as a “fall inspired tiki,” with rum, sweet potato syrup and rosemary. It was incredibly well-done and so creative, and I’m still thinking about it. This is the place to go when you want something a little more moody and elevated this summer.

teardrop lounge

Teardrop Lounge is a Portland staple and absolutely worth a visit. The circular bar setup makes the experience feel interactive: you can watch the bartenders work, chat easily, and feel more connected to what’s happening. The cocktail program is top-tier. They even include a flavor map on the menu, showing the profile and strength of each drink, which is super helpful. I had a plantain-infused rum cocktail that blew me away. Our bartender, Drew, was also fantastic and made the whole experience even better!

the uncanny

Last but not least, The Uncanny in the Mississippi neighborhood. This spot has a spooky-meets-tropical vibe, set inside a black house with a really unique interior. There’s lounge seating inside and a large outdoor patio with heat lamps. They describe themselves as “the lovechild of a speakeasy and a dive bar,” which honestly feels accurate. The cocktails lean creative and tropical, and they also have a full vegan food menu. I’ve tried their draft espresso martini, the “Surf & Rally,” and also the “Spawn of Satan,” which is a rum-based tropical-feeling cocktail (of course I got this one). It’s a fun spot with a really unique vibe that makes it stand out!

Portland’s cocktail scene is one of my favorite things about living here. Each bar brings something completely different to the table, whether it’s design, creativity, or overall vibe.

If you’re looking for places to check out this summer, you really can’t go wrong with any of these!
